Is it possible to use the v2 audio jacks board on the 7U case as 4 mono outputs?
Yes, you can connect two Stereo Line Out 1U modules to it. This is described on page 9 of the manual: https://intellijel.com/downloads/manuals/stereo-line-out-1u_manual_2019.11.21.pdf
